There’s something wonderfully cinematic about arriving at Palacio de Rojas. El Papagayo del Carmen Restaurant

Connected to the hotel but also accessible directly from the street, El Papagayo del Carmen has quietly become one of the area’s most charming dining spots. The atmosphere strikes an ideal balance between intimate neighbourhood restaurant and stylish hotel dining room, with playful bird-inspired décor subtly woven throughout the interiors in a tasteful way.

The menu focuses on Mediterranean flavours and seasonal ingredients, offering both a set menu and à la carte options. Service throughout dinner feels warm and genuinely welcoming, with staff happy to guide guests through recommendations without the rehearsed formality that can sometimes dominate hotel restaurants.

Among the standout starters are the tuna tartare and smoked octopus served with sweet potato. The octopus is beautifully tender with just the right amount of smokiness, while the sweetness of the potato balances the dish perfectly.

For mains, the fish of the day is consistently excellent and cooked with precision, while the slow-cooked beef cheek with sautéed vegetables is rich, comforting and deeply satisfying — exactly the kind of dish that pairs dangerously well with an extra glass of Spanish red wine.

The restaurant’s relaxed yet polished atmosphere makes it equally suitable for romantic dinners, long lunches or casual evenings after a day exploring the city.

Breakfast

Breakfast is served inside El Papagayo del Carmen from 8am and feels refreshingly elegant compared to the usual rushed hotel buffet experience. Wooden tables are beautifully set with ceramics and traditional Spanish crockery, giving the entire morning service a more relaxed, residential feel.

Guests can opt for a classic continental breakfast with fresh bread, pastries, cold cuts, fruit, coffee and tea, or order hot dishes including Eggs Benedict, omelettes and sides such as avocado, salmon and tomatoes. Everything feels fresh, generous and thoughtfully presented — the sort of breakfast that encourages lingering rather than rushing out the door.

Service

What truly elevates Palacio de Rojas beyond simply being a beautiful boutique hotel is the service. From check-in to departure, the staff consistently go out of their way to make guests feel comfortable and genuinely cared for.

Recommendations for restaurants, neighbourhoods and local attractions feel personal rather than scripted, while thoughtful touches such as chilled cava waiting in the apartment, daily replenished coffee capsules and complimentary extras available upon request add to the feeling of staying somewhere special.
