Lottie: A Bold New Mexican Escape Comes to Sydney
In January 2025, Sydney’s rooftop scene will get a much-needed dose of vibrant, modern Mexican flair with the arrival of Lottie, the latest culinary jewel from Liquid & Larder. Situated at The EVE Hotel in Redfern, this lush oasis is set to redefine what we think of as Mexican cuisine—and if you thought you knew what to expect from a margarita and taco combo, think again.
Lottie is more than just another place to grab a bite. It’s an experience—one that invites you to step into a world where fresh Australian produce meets the bold, zesty flavours of Mexico. With a design as visually arresting as the food is delicious, the space, crafted by celebrated Sydney designer George Livissianis and landscaped by Daniel Baffsky of 360 Degrees Landscape Architects, is a stunning mix of luxury and nature. Think pink travertine, textured cayenne terrazzo, verdant greenery, and a panoramic view of the city skyline—there’s no shortage of Instagrammable moments here.
But let’s not get distracted by the pretty things (although, really, Lottie is hard to look away from). The magic lies in the menu, which brings together the authentic flavours of Mexico with the freshest local produce from Australia’s shores. At Lottie, expect a more nuanced take on Mexican cuisine than the usual fiery tacos and burritos. Executive Chef Pip Pratt (who’s worked with the likes of Firedoor and Bar Brosé) is crafting dishes that draw on Mexico’s rich culinary heritage, but with the sort of subtlety and sophistication that’s rare to find on our shores. Think delicate herbs, zesty citrus, floral notes, and a dash of heat from expertly balanced chilies.
There are a few things that make Lottie stand out, and we’re not just talking about the retractable roof (though that will definitely come in handy when the weather turns). One of the most exciting features is the housemade tortillas, created fresh on-site using an imported tortilla press and cooked on a comal right before your eyes. Paired with main dishes that range from ‘Murray cod pibil’, baked in a banana leaf with red annatto, to the sublime ‘beef chop’ aged at Liquid & Larder’s central butchery, it’s clear that Lottie isn’t just about food—it’s about an artful journey for the senses.
And it’s not just the food that gets special treatment. The drinks menu, crafted by Liquid & Larder’s Group Bars Manager Ben Ingall, offers an exceptional range of cocktails, tequilas, mezcals, and agave spirits. Sip on a classic margarita or one of their seasonal twists, or dive into a rare selection of spirits like sotol and raicilla. There’s also a carefully curated wine list designed by Group Sommelier Kyle Poole, featuring biodynamic and natural wines that complement the bold flavours on your plate. Lottie’s drinks and food are in perfect harmony, each element enhancing the other.
But what about the vibe? Lottie is no quiet little hideaway. From the moment you take the lift to the rooftop, you’ll find a place that hums with energy. Sun-soaked afternoons roll into sultry evenings, with chilled house beats giving way to more upbeat tunes as the sun sets and the margaritas start to flow. Whether you’re lingering over a long lunch or enjoying a sunset cocktail, Lottie promises a great escape this summer!
