Celebrated British chef and seafood aficionado Rick Stein has announced the upcoming opening of his flagship Australian restaurant, Rick Stein at Coogee Beach.
Set to open its doors in November 2025, the restaurant will be housed within the soon-to-be-launched InterContinental Sydney Coogee Beach, offering sweeping views and a front-row seat to one of the city’s most iconic shorelines. For Stein, who’s long been associated with the mantra “fresh seafood, simply prepared”, Coogee provides the perfect backdrop to continue his love affair with the sea.
A Personal Touch
This isn’t just another restaurant launch — it’s a family affair. Rick’s Australian-born wife, Sarah Stein, brings her background in public relations and interiors to the project, shaping everything from the look and feel of the space to the storytelling around it.
“Coogee Beach is yet another stunning coastal location for our Australian restaurant portfolio,” Rick shared. “It’s especially meaningful for me as my wife Sas grew up in Sydney, so opening a restaurant in her hometown makes this venture all the more special for us both.”
The new restaurant will seat 224 guests and feature a variety of dining spaces, including a signature restaurant, bar dining, and a courtyard terrace. A Celebration of Local Bounty

Expect a bounty of ocean treasures: Mahi Mahi from Nelson Bay, Stockton Pipis from Port Stephens, line-caught Mackerel from Ulladulla, and the fan-favourite Singapore Chilli Crab, made with sweet, delicate Nelson Bay Blue Swimmer Crab.
Of course, no Rick Stein venue would be complete without his classic British fish and chips — mushy peas and hand-cut chips included.
“We’ll continue to utilise the relationships we’ve built in our regional locations to source that same produce in Sydney,” Rick explained. “It’s the best of both worlds.”
A Growing Coastal Legacy
Rick Stein at Coogee Beach will become the third jewel in the Steins’ Australian restaurant crown, joining the much-loved Mollymook (opened in 2009) and Port Stephens (2018) venues. All three locations share a common thread — breathtaking coastal settings, exceptional seafood, and a laid-back luxury that invites guests to unwind and savour the moment.
The launch is also a result of a deepening collaboration with Salter Brothers, the Australian hospitality group that acquired the Bannisters Group in 2024. Paul Salter, Managing Director of Salter Brothers, is enthusiastic about the expansion:
