There’s something quietly powerful about a heritage estate stepping confidently into a new era. On Monday 2 February 2026, one of the Southern Highlands’ most storied addresses officially reopens as Ardour Milton Park Bowral, unveiling a beautifully reimagined retreat that feels both timeless and distinctly modern.

Following a multi-million-dollar renovation, the landmark property has been transformed into a luxurious country hotel where historic architecture, manicured grounds and contemporary design coexist effortlessly. The arrival experience sets the tone immediately — elegant but unpretentious — inviting guests to slow down and settle into a rhythm shaped by landscape, light and space.

Originally established in 1910, Milton Park has long been woven into the cultural fabric of the Southern Highlands. Its rebirth as Ardour Milton Park Bowral honours that legacy while reinterpreting it for today’s traveller: one who values authenticity, thoughtful design and experiences that feel personal rather than prescribed.

A Destination for Dining, Gathering and Wellbeing

The reopening introduces the hotel’s signature dining venues, led by Horderns, a refined yet relaxed restaurant designed for long lunches and lingering dinners. The Polo Bar offers a more intimate setting for evening cocktails and conversation, with a dedicated charcuterie room set to follow shortly — a detail that speaks to the hotel’s social, European-inspired approach to hospitality.

Wellness also takes centre stage, with Èliva Bowral, the hotel’s spa and wellness offering, set to open soon after. Designed as a restorative sanctuary, it will add another layer to the guest experience, complementing the estate’s gardens, walking paths and sense of calm.

General Manager David McDonald describes the reopening as the beginning of a carefully considered journey. “We are eager to welcome guests back to Milton Park to showcase the depth of care that has gone into every detail, from the accommodation, our new spa offering to the dining experience at Horderns. This is just the beginning, with The Polo Bar’s charcuterie room and our new Èliva Wellness Spa set to follow and further enrich the guest experience”.
