As the name suggested here guests can expect colourful and fun Caribbean cocktails including the classic Pina Colada which not too surprisingly can be found on the menu. For those who are interested in trying something different, the Caribbean flavoured signature cocktail “Planteur de la Patronne” is made using Françoise’s family recipe from Martinique and is sweet, delicious and refreshing.
9. The Restaurant, Le Comptoir de Marthe et Edouard
No stay in Vietnam would be complete without savouring the local cuisine and at The Island Lodge, you have the opportunity to enjoy an authentic fusion cuisine with, you guessed it, a French influence. Vo Quoc Thach, the hotel’s Vietnamese chef, marries local Vietnamese flavours with classic elements of the French culinary tradition. The name of the restaurant, which is decorated with old family photos on the walls, is a tribute to Michel’s grandparents who spent 25 years living in Halong Bay during the French presence in Vietnam.
