Hyatt Regency Sydney has launched its luxurious rooftop bar, Zephyr, boasting unique vermouth inspired cocktails and rums sourced from around the globe with vintage originals from the 1950’s and 60’s.
Zephyr is set to make a lasting impression on Sydney’s bar scene, taking advantage of its unrivalled location overlooking the city’s celebrated Darling Harbour. The extensive drinks list appeals to all tastes, from timeless classics to the more contemporary and experiential beverages.
“We’ve been able to create a variety of cocktails using unique barrel aged vermouths served on tap and rums using hypersonic and sous vide infusions. The hypersonic infuser is able to ‘barrel age’ cocktails in seconds and infuse spirits in minutes to create unique and innovative drinks.” Didier Nahum, Zephyr Bar Manager.
Zephyr also features Sydney’s largest range of aperitifs and digestives as well as luxury frozen cocktails using the finest liquors, spirits and freshly hand squeezed juices. The food menu is just as appetising including contemporary dishes infused with fortified wines and rum reductions, as well as age-old favourites such as juicy pork and herb meatballs and a classic charcuterie board.
