Sydney’s food scene just got a whole lot tastier, with the launch of Percy, a chic, Spanish-inspired wine bar in the heart of Pyrmont. Inspired by the pintxos and tapas bars of San Sebastián and Barcelona, Percy delivers a fresh, laid-back approach to Basque-style cuisine, all wrapped in an atmosphere that’s as vibrant as it is relaxed.

With a 50-seat capacity, this intimate venue is a celebration of classic Spanish flavours, top-notch local ingredients, and that unmistakable Spanish swagger. Designed with Iberian pottery, Spanish tiles, and marble surfaces, the space exudes the charm of San Sebastián’s bustling side streets, where locals gather for a bite, a drink, and plenty of lively conversation. Located within the newly revamped Hotel Woolstore 1888, Percy is bringing a slice of Basque culinary culture to Pyrmont, and we’re absolutely here for it.

Tapas with a Twist: The Flavours of Spain, Reimagined

At Percy, the menu is a playful homage to the Spanish tradition of snack-heavy dining, featuring a selection of pintxos, small plates, and hearty options perfect for sharing. Start your culinary journey with Percy’s twist on the iconic Gilda skewer ($7), a perfect bite of pickled guindilla peppers, salty manchego, and tangy olives. From there, things only get better, with zesty Padron Peppers with Labneh ($14), savoury Pan con Tomate ($8), and irresistible Nduja Butter on Sourdough ($7). If you’re craving something crispy, the Artichoke Fritters with Romesco ($16) and Croquetas del Día ($16) won’t disappoint, while the Fried Squid Bocadillo with Saffron Aioli ($15) is a must-try for seafood lovers.

For a heartier indulgence, Percy’s “La Cocina” section serves up hearty favourites like Flank Steak with Mojo Verde($44) and the ever-popular Spatchcock Picante with Sobrasada Jus ($46), packing all the deliciously bold flavours of Spain into one mouth-watering plate. And when it comes time for dessert, refresh your palate with Lemon Sorbet with Arbequina Olive Oil ($16) or the dreamy Crème Catalan with Caramelised White Chocolate ($16) — the perfect sweet ending to a sensational meal.

Get ready to meet your new obsession: Conservas—the preserved seafood that has taken Basque wine bars by storm. At Percy, the conservas menu is nothing short of divine, with gourmet tinned delights like sardines, anchovies, and salmon, sourced from some of the finest producers in Spain, including La Narval and Muñoz Rojo. Whether you’re pairing these with a glass of wine or enjoying them as a standalone snack, conservas will soon be your new go-to indulgence.

No Spanish dining experience is complete without a great glass of wine, and Percy’s list of Spanish vinos is truly something special. With a rotating selection of organic and minimal intervention wines—plus a focus on native Spanish varietals—you’ll find yourself sipping the best of Spain’s independent wine producers. Collaborating with Scott Waleyof The Spanish Acquisition, Percy has curated a wine list that will have you rethinking your usual go-to bottle. Expect to discover rare varietals, including some from extinct grape varieties that you won’t find anywhere else in Sydney.

If you’re feeling adventurous, the Riojan Sunrise cocktail ($22) combines Spanish Gin, Gran Zinio Cava, and Hartshorn Sheep Whey Vodka, while the Margarita Picante ($26), made with Tromba Blanco tequila, packs the perfect punch. Not a cocktail fan? Percy also offers a selection of Spanish Sherry and Estrella beer, a local favourite from Barcelona, to complement your meal.

From 3-6pm, Tuesday to Friday, Percy’s Happy Hour brings the fun, with tapas and cheese deals to pair with your favourite wine or Sherry. Whether you’re popping in for a quick bite and a drink or planning to settle in for the evening, Percy’s warm, welcoming hospitality promises a memorable experience every time.

Designed with both intimate dining and social gatherings in mind, Percy offers a mix of high bar seating and a bright atrium dining area bathed in natural light. With communal tables encouraging lively conversation and a private dining room for 14, it’s perfect for everything from relaxed date nights to corporate cocktail events (up to 80 guests).

That is exactly how Finca Victoria arrived in Sa Riera—a restored estate where the pine-covered hills and Mediterranean set the tone before you even step inside.

Opened in 2025 after careful renovation of a historic property, it captures something rare on the Costa Brava: the feeling of having discovered a corner that hasn't yet lost its soul. Just thirty-eight rooms, all adults over fourteen, spread across what feels more like a private summer house than a resort determined to impress from the first moment. The central cloister anchors everything, with warm stone arches, ceramics, and Catalan tuff flooring that gives you a sense of place without leaning too hard on nostalgia.

The food alone tells you this was done with intention. AlKostat del Mar, led by chef Jordi Vilà, serves seasonal Catalan cooking rooted in local produce and fire. A rice dish can become the reason you're traveling somewhere new. Breakfast stretches from eight until eleven with made-to-order hot options alongside a carefully edited buffet—eggs Benedict with salmon, avocado toast, regional specialties like black butifarra with beans—that makes rushing feel unnecessary.

But what lingers is the room itself. In our Terrace Suite, nearly sixty square metres overlooked both sea and the rolling hills of Begur. The bathroom held both bathtub and rainfall shower. An outdoor shower faced sideways toward the horizon. These details don't shout; they settle into your memory slowly.

Spa appointments run through the Victoria Wellness Spa with water circuits, saunas, jacuzzis, and sensory treatments—all requiring advance booking, which somehow makes the peace even sweeter when you arrive. Morning yoga happens inside one of the suites, sunlight filling the space as you ground yourself into the day rather than race through it.

There is a complimentary shuttle to Begur village until late evening, and the beach is literally a short walk away. Private boat trips can be arranged for up to six people. Paddleboards, loungers, anything on the water the hotel can help coordinate through external partners. Yet even with
